Summer Shell Salad

A nice summer pasta salad that isn't mayonnaise based so it doesn't spoil. It's best to prepare the day before you need it to allow the flavors to combine.

1 pound medium shells
1 large sweet onion
1 or 2 seedless cucumbers depending on taste (I use 1 1/2)
1 green pepper
1 jar pimento (drained)
1 can condensed tomato soup
3/4 cup oil (canola or vegetable)
3/4 cup cider vinegar
2 Tbl sugar (to taste)

Peel cucumbers, quarter them, then slice into 1/4 inch pieces
Dice onion
Seed and dice oepper
Combine soup, oil, cider vinegar, and sugar
Cook shells to al dente and drain
Combine ingredients other than pimento and refrigerate
Stir in the evening and morning
Just prior to serving, add 1/2 jar of pimento and stir again
Top with remaining pimento and serve :D
